Today was one of those days that I just didn’t have a lot of time and attention to devote to lunch, and to be honest, I wasn’t that hungry.
I happened to have some baby carrots and cauliflower in the fridge, which seemed healthy to munch on, but the ranch dip in the back of the fridge just seemed so heavy. Then I remembered I had come across this “healthi-er veggie dip” that sounded perfect… a combination of ranch dip and cottage cheese to lighten up the dip. It did the job! Nice texture and it didn’t really dilute the ranch flavor either!
Healthier Veggie Dip
- 1 part ranch veggie dip (not ranch, veggie dip)
- 3 parts cottage cheese
Combine and serve with veggies for dipping!
