I adore this salad. It’s so wonderfully simple and easy, filling and flavorful. It combines two of my favorite things, avocados and black olives, and pairs them with sunflower seeds for a wonderful crunch and olive oil and balsamic vinegar for a vibrant and healthy dressing.
Kate’s Signature Salad
1/2 head of green leaf lettuce, torn into small pieces
1/2 can black olives
3 tbps sunflower seeds
olive oil and balsamic vinegar
Combine half of the lettuce and olives in a bowl. Slice one avocado, remove pit, slice into small pieces and remove from skin, adding to lettuce and olives. Add olive oil and vinegar in equal proportions as desired. I generally pour each for 5 seconds. Top with sunflower seeds.
