Cucumbers with Olive Oil and Balsamic

It just so happens that my husband is not so entirely fond of cucumbers.

And it just so happens that I am.

And it also just so happens that said husband is in the field this week. So, in the spirit of making lemonade of lemons, I’ve decided to take this opportunity to enjoy those foods that I know he would never eat with me (like zucchini and almond milk).

Tonight…

was cucumber night.

So simple, yet so delightful.

So simple, in fact, that it doesn’t really even warrant writing it out as a recipe. Cut up a cucumber. Throw on equal parts olive oil and balsamic vinegar. Salt and pepper to taste.

And there you have it, a ridiculously easy and remarkably delicious cucumber dish… perfect for those nights that you find yourself not needing to also feed your husband who might just so happen to hate most vegetables.
