On a payday eve not too long ago, the hubby and I were engaged in a challenge to find something to eat amongst the sparse groceries already present in our house. What we found was a frozen package of sweet Italian sausages in the furthest recesses of the freezer, an onion, and a few potatoes.
This reminded us of a dish we have every year at our friend’s Christmas Eve party and so, inspired, we set out to make the sausage and peppers that we remember so fondly. Roughly half way through, however, it dawned on us… Our friend Trudy STEWS the sausages. She doesn’t sauté them. We don’t know what we were thinking, but the end result still turned out wonderfully, albeit more breakfast-home-fry-ish than we intended, but good nonetheless. 🙂
Sweet Italian Sausage and Potatoes
1 pound sweet Italian sausage, removed from casing
2-3 large roaster potatoes, cubed
1 large onion
2 tbsp olive oil
Combine ingredients in a medium saucepan, sauteing with the olive oil until the sausage is thoroughly cooked and the potatoes are fork-tender.
